I don't know that any of those would hurt them as such, but feeding them to a dog is a poor start on a complete and balanced diet. Dogs are better off eating dog food and little else. Since dog foods are the complete and balanced diet dogs need, adding other junk only degrades their diet.

It depends on the dog -- some eat, some don't. Like people, some eat spinach all the time, some never. The best is to trust the dog with whatever it likes -- a caring owner will not force a dog to eat anything -- if the dog does not want it.
Just try whatever food you want and see if the dog likes it -- and take it from there.
I had dogs that ate cabbage and tomatoes in a raw salad, another dog that never would have touched any vegetable. It is not even the dog's type -- mostly its about personal taste/nature and habits acquired when it was small.
I post here two links about dogs -- one is about the music that dogs like and relax when exposed to it, the other is about a dog that I have loved -- he ate Chinese food with great pleasure and he was singing sometimes in the mornings in Botswana when the heat did not come up yet...

Some vets theorize that this could be due to some kind of a mineral deficiency. Noone really knows for sure. I once had a Pomeranian who had an anxiety disorder and would do this all the time. Some dogs do it as a result of a psychological problem or due to anxiety. Female dogs seem to be more prone to it than males. How to stop it? Some suggest putting meat tenderizer on their food. There are also other things you can get from the vet , powders or pills, to put in their food that supposedly makes them less likely to continue eating their excrement. Ask the vet for help to get him to stop it. Or do some research online and see what has helped other people.

Yes to all 3. My dogs LOVE raw cabbage, they will beg and beg for it! Yes, I have strange dogs. In moderation, it should be OK for them.

Every dog is different, but when they're hungry, believe me, they're gonna eat whatever they see in front of them.

I wouldn't recommend feeding a dog table food at all. It isn't necessarily healthy for them.
